Eve’s Garden Bed & Breakfast

Eve’s Garden Bed & Breakfast is an organic inn and ecology resource center hand-built by owners Noble and Alaine Baker in the small West Texas town of Marathon, sitting at 4,000 feet elevation at the gateway to Big Bend National Park. The property was constructed using papercrete, a building material the Bakers pioneered and still champion, combining recycled paper, sand, clay, and Portland cement into super-insulated blocks shaped into arches, domes, and vaulted ceilings inspired by classical Southwest adobe construction.

The inn offers seven distinct private guest rooms arranged around a covered atrium courtyard with a fish pond, 24-foot vaulted ceiling, and a firepit gathering area. Large indoor organic gardens bloom year-round with roses, bougainvillea, and seasonal vegetables, while a separate greenhouse tends over 20 varieties of roses. Breakfasts are homemade and gourmet, drawing on ingredients from the on-site gardens and local ranches and farms around the Marathon area.

Eve’s Garden suits travelers who want a quiet, thoughtful stay rather than a standard hotel experience, and who are heading into the Big Bend backcountry or exploring the art towns of Marfa and Alpine along the way.

Eve’s Garden is best known for its papercrete architecture, a construction method the owners developed using recycled paper, sand, and cement that produces rooms with R-40 insulation ratings and striking dome and arch detailing. The property is also recognized for its organic gourmet breakfasts, its stargazing deck and dark-sky setting, and the indoor gardens that keep the courtyard in bloom through all four seasons.

Avenue C & North 3rd Street, one block north of Highway 90 in Marathon, Texas. Big Bend National Park‘s Persimmon Gap entrance is approximately 40 miles south on US-385. Marfa is about 60 miles to the west on Highway 90.

Seven Rooms Around a Living Courtyard

Eve’s Garden has seven private guest rooms, six of which open directly onto the covered atrium courtyard. Each room was hand-built using papercrete block construction, giving the walls a warmth and solidity unlike standard frame construction, and five of the rooms include romantic faux fireplaces. Rooms stay comfortable year-round through quiet, highly efficient mini-split climate control units, and the thick papercrete walls hold their temperature well in both the summer heat and the cold West Texas nights.

The atrium itself functions as a shared living space: a fish pond sits at its center, and the 24-foot vaulted ceiling draws in light while large fans circulate air in the warmer months, with propane heaters taking over when temperatures drop. Tables and chairs are set up for dining and gathering, and the space has hosted intimate events for groups of up to 50.

Just beyond the atrium, a courtyard fire pit serves as an evening gathering spot where guests share stories and watch the West Texas night sky. The property also features a reflecting pool that doubles as a solar-heated lap pool in summer months, an organic greenhouse, and a dedicated stargazing deck.

Organic Gourmet Breakfasts

Garden-to-Table Every Morning

Breakfast at Eve’s Garden draws from the on-site organic gardens, which supply fresh greens, tomatoes, and seasonal produce throughout the year. Eggs, cheese, and yogurt come from Z-Bar Farms, a local ranch just outside Marathon, and coffee is roasted in neighboring Marfa by Big Bend Coffee Roasters using organic fair-trade green beans. The menu rotates daily and has included dishes like ricotta pancakes with lemon sauce, sweet potato frittata, baked grapefruit with meringue, and hand-carved candied pears alongside homemade scones.

Dietary Accommodations

The kitchen is happy to work with vegetarians, vegans, diabetics, and guests with other dietary preferences or restrictions. When booking, guests are asked about any special needs so the morning meal can be planned accordingly. The goal is a hearty, energy-building breakfast for those heading into the trails and backcountry of Big Bend National Park.

Off the atrium, a courtesy room is stocked with organic fair-trade coffee brewed for early risers, hot breakfast items served via a steam table and air fryer, an ice machine, microwave, electric tea kettle, filtered reverse osmosis water for bottle refills, and the fixings for evening s’mores at the fire pit. Each guest room also includes its own mini-fridge. A small selection of books is available, and guests are welcome to carry a favorite title along on the rest of their journey.

Stargazing Deck & Dark Skies

Marathon’s position in the high desert of West Texas, far from major light pollution, makes the night sky one of the area’s most consistent draws. Eve’s Garden has a dedicated stargazing deck on the property for guests who want a clear, unobstructed view of the stars after dark.

WiFi, Art & Local Souvenirs

Wireless internet is available throughout the property without a password. A small collection of locally made souvenirs is available on-site, including photography prints and card sets by Alexa Walker, Big Bend Coffee Roasters fair-trade coffee in Eve’s Garden branded bags, Cowboy Johnny’s Local Honey from Alpine, and handcrafted items that change with the season.

Practical Information

Reservations can be made online at evesgarden.org, where separate booking links are available for the bed and breakfast rooms and for Casa del Norte, an additional vacation rental on the property. The inn collects a 50% non-refundable deposit at booking, with the remaining balance subject to a 30-day cancellation window. Guests who need to cancel due to unforeseen circumstances can receive a full credit toward a future stay.

Breakfast is served each morning from the courtesy room, with coffee available before the main meal for early risers. Dietary preferences and restrictions should be noted at the time of booking so the kitchen can prepare accordingly.
