Lajitas Trading Post was founded in 1899 and has been in operation continually since then. Today you can stop by for a fresh deli-style sandwich or meals to go.  Be sure to say hi to the Mayor of Lajitas (he's a goat famous the world over for his beer drinking habits) Clay Henry III, in his open air office right next door. He prefers Lone Star, but any suitably cold malt beverage will do.
